    I liked the article a lot. Certainly it makes a coffee house proud to do it’s own roasting and I know that the customers level of awarness grows once they visit a working roastery (even with a small roaster). About the sound of coffee cracking, is not an accurate way to know when the coffee is ready, and most of the time a simple termomether will do a better job in my humble opinion.

    I laughed at the “third crack” part. It must of been a mistake. I’ve never seen Jeff or Eric roast into the “somewhat mythical” third crack. It would be a heck of a fire though! :)
